Re-arranging is fun :)

We just got a new table for our place 
& it takes up more space then our last table 
sooo....
that meant re-arranging!
(which i LOVE.....and chad hates ;P)
But him being the wonderful husband he is -- went along with my craziness 
and helped me move things around.
So here are a few pics of what our place is looking like....

Pumpkin Spice Muffins...

Today I made, for the first time ever, PUMPKIN SPICE MUFFINS!
They are SOO delicious...
& I just knew I would be sharing this recipe!
SO many of my friends were posting pics and statuses about having their first 
pumpkin spice latte of the season 
& it just got me craving the taste! :P

I have had a can of pumpkin pure sitting in my pantry for months and months
& I thought this was the perfect time to use it!

This is a Pinterest recipe that i made a few modifications to!

PUMPKIN SPICE MUFFINS

Muffin Ingredients:
1 1/2 Cups of Flour
1 Teaspoon Baking Powder
1 Cup Pumpkin Puree
3/4 Teaspoon Pumpkin Spice Mix
1/2 Cup Coconut Oil
1/2 Teaspoon Baking Soda
2 Large Eggs
1 1/4 Cups Sugar
1/2 Teaspoon Salt
(I use Himalayan Crystal Salt) 

Icing Ingredients:
1 1/2 Cups Powdered Sugar
1/2 Teaspoon Vanilla
2-3 Tablespoons Milk
(Depending on the consistency you want)


Directions:

Preheat Oven to 350 Degrees.
In one bowl, mix pumpkin puree, coconut oil, pumpkin spice mix, 
eggs, sugar, baking soda, and salt together.
In another bowl, mix the flour and baking powder. 
Combine the two bowls. 
Bake for 20-25 minutes.
Yields 12 Muffins.

For the icing, mix the 3 ingredients together.
Drizzle icing over muffins.

Easy Peasy Side Bun...

Tried out, for the first time, not just ANY bun... but a sock bun
It took me a few tries to get it figured out
but when I did it was quite cute!
I Also did a french braid first to pull all the hair to the side.
And from the ponytail of the french braid, I rolled my hair up into a sock bun.
Def. will be doing this hair style again!
Right now I am using an old sock of Chads haha
so i might need to invest in an actual foam sock bun :P

Was an awkward way to take the picture...not sure why I didn't just point the camera behind me lol!
But hey, it worked! 


New Boots...

I have been LOVING my new Roxy boots!
Perfect for the end of summer and into the fall.

I purchased them at Below The Belt.
& They are really cute to throw on with some leggings!
The leggings I also purchased at Below The Belt...On Sale for so cheap!
Thought they were kind of fun! :)


They have quite a few other cute boots as well....
Might have to get another pair ;)

Cute Curled Hairstyle...

The other day I felt like curling my hair
Which I don't do very often.
& I had watched a youtube video on this really cute hairstyle
And I just had to try it.
(Youtube channel -- LuxyHair)
Surprisingly it was super super easy
& it turned out the first try!
And I am not someone who can do hairstyles easily!
So I just had to share.


1. Start by curling your hair. Whether you want tighter curls or looser curls is up to you.
          With this hairstyle, you don't have to worry about having perfect curls everywhere either!
2. Back comb the top, middle section of your hair all the way to where you will be gathering it in the back.
3. Pull a little section of hair from above your right ear, pull it around the back of your head, and bobby pin it to the left side of your head at the back.
4. Pull a little section of hair from above your left ear, pull it around the back of your head, and bobby pin it to the right side of your head at the back. 
5. Take a little section of hair from between those two points where you bobby pinned, and twist it around and around to form a little "rose" and pin that down with bobby pins.
6. And VOILA.

Not sure how well of an explanation that was. 
But between the explanation and the picture I'm sure it could be figured out :P

Im back....with a treat to share!

I totally neglected my blog when I was 
introduced to instagram! 
YIKES.
Its just so easy to upload pictures QUICKLY and write
a little description on instagram!
BUT...
I do want to get back into making a blog once in a while.
I've missed it!
& it's fun to look back at!
:)

At the farmers market here, there is an amazing stand called
'Oh Goodness'.
My mother-in-law introduced me -- & i am HOOKED.
It's made with some healthier things like coconut flour, almond meal & flour etc.
Its breads and scones and muffins and brownie bites and PIES.............
THEE most DELicious pie i just tried was there blueberry one!
It's an almond meal pie crust with a cranberry jelly center with fresh local blueberries.

As I was eating it i thought to myself...
"this is such a simple pie.... with simple ingredients! I def. could figure out how to make this!"

So I attempted it today!

I had everything I needed MINUS a pie pan.....
seriously...
Of ALL the kitchen tools and accessories I have i have never gotten a pie pan!
However, I am pretty good at using something i already have and making it work!

So i used a 'muffin top' pan.
So instead of one large pie I made 6 mini pies.
(sorry i never took a picture of it clean before I used it)

Things you will need....

Pie Crust:    1/2 cups Almond Meal or Almond Flour
                                                            3 TBSP Butter or Coconut Oil
                                                            3 TBSP Sugar or Sugar Substitue (ex. agave)
                                                            1 tsp Vanilla Extract 

                                      Pie Filling:    1 packet Pudding or Jello of choice
                                                           Whatever kind & amount of fruit

Pie pan or Muffin Top pan

First thing I did was make the pudding and set it aside to cool till I needed it.




I then combined the ingredients for the pie crust and baked it at 350 degrees for 9-10 minutes.



I then took them out of the pan and placed them into 6 seperate bowls.




Then I placed the pudding on top.


Then I placed the blueberries on top.




Then popped them in the fridge for a couple hours to really thicken the pudding.

DEElicious and pretty guilt free :P

Its a must try 
& i will def. be making it again!

Things I Have Loved Lately ...

It's been a while since I have been on!
Whoops!
But I have a friend who reminds me every once in a while to get making a blog! :)
So this blog is just about a FEW of the things I have been loving lately...


Young Living - Thieves products! Can always trust our place to be clean with this stuff! 


These are some micro-fibre clothes I found @ homesense & I have been LOVING them!
They are easy to grab to clean up something! 
(instead of so much paper towel -- i LOVE paper towel :P)
They absorb & clean amazing and you can just toss them right into the washing machine.
& of course -- they are such fun colors!
(I'm a geek over kitchen stuff I know haha)


This doesn't look so appetizing i know! -- but its a healthy little something I have loved whipping up recently! 
It's just canned artichoke hearts, tomatoes, feta cheese, olive oil, pepper, and shredded coconut!
YUM YUM YUM
I am not a huge fan of it by itself! 
But what I like to do is toss it onto a piece of toast or an english muffin or my FAVORITE -- those savoury tomato & basil rice cakes!
Try it out! 


& of course these little squirts!
How can you not love them! :P

Italian Sausage Soup

Mmmmmm Mmmmmm
I ran across this yummy recipe on Pinterest!
& it isn't my first time making it!
It's one of our favourite soups, so i thought I'd share!
Definitely for those meat lovers & not vegetarians :P
